Recipe: Marble Cake

This is a cake my mum used to make at least once a week when I was younger as I loved it so much: it's super fluffy and moist and it tastes as amazing as it looks! You only need a few basic ingredients and it literally takes five minutes to make - it's also a great cake for parties and such as everybody seems to love it!

  • 150g soft unsalted butter
  • 190g plain flour
  • 180g caster sugar
  • 10g cocoa powder
  • 3 medium eggs
  • 3 tbsp milk (or Baileys)
  • 1 tbsp rum flavoring (or rum)
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • a pinch of salt 
And here's how to make it: mix the butter and sugar until light and creamy, add the eggs and then slowly mix in the flour and baking powder. Mix until fully combined! Now add the milk (or in my case, Baileys), rum, vanilla extract and a pinch of salt. Fill half the cake mix into a greased cake tin. Then add the cocoa powder to the other half of the cake mix and fill up the rest of the cake tin with it. Now use a fork and swirl it around to gently mix the light and dark batter - this will create the lovely marble effect which gives the cake its name!
Pop it in a preheated oven (170°) for around 45 minutes or until done. Insert a wooden skewer into the middle of the cake - if it comes out clean, your cake is done and ready to be taken out! Let it cool down, sprinkle some icing sugar on top and enjoy!
